Sealed Foil Salmon • Ember Packs
Sealed in foil, steamed in its own juices — nothing gets in, nothing gets out. Not even the horde.
This is premium survivor fuel: high protein, omega-3s, zero carbs. The foil-pack method is
practically bunker-proof — no flipping, no sticking, no watching. Seal it, heat it, open it,
eat like someone who plans to see tomorrow.
⚗ Required Supplies:
- 2 skin-on salmon fillets, about 1 lb total (thawed — see thaw protocol below)
- About 3 oz sliced shiitake mushrooms (use the whole 5 oz pack if you love mushrooms)
- 1 carrot
- ½ onion, sliced thin
- 1 lemon
- 1½ Tbsp unsalted butter, divided
- 1 Tbsp sake, divided
- ¼ tsp salt, ⅛ tsp black pepper
- 2–3 green onions, sliced
- 2 Tbsp ponzu sauce, for serving
- Heavy-duty foil, 2 large sheets (about 12×12 inches each)
🔧 Preparation Protocol:
STEP 1 — THAW PROTOCOL: Frozen salmon thaws overnight in the fridge (the safe
route), or sealed in cold water for about an hour if you're in a hurry. Never thaw on the
counter — that's how you grow things you can't see.
STEP 2: Preheat the oven to 425°F. Pat the fillets very dry and sprinkle all
sides with the salt and pepper. Smear ¼ Tbsp butter in the center of each foil sheet.
STEP 3: On each sheet, make a bed of the sliced onion in the buttered area and lay
one fillet skin-side down on it. Pile carrot matchsticks left and right of the fillet, heap
mushrooms on top, place a lemon round in the middle, and top each fillet with ½ Tbsp butter.
Drizzle ½ Tbsp sake over each. (Cut all vegetables before touching the raw fish, or wash the
board and knife between — and wash your hands after handling raw salmon.)
STEP 4: Seal each packet: bring the two long edges together above the salmon and
fold them down 2–3 times, then fold each short side in 2–3 times. Snug, but leave a little
air pocket inside for steam.
STEP 5: Set both packets on a baking sheet (not touching) and bake 15–18 minutes
for thick fillets (1–1½ inches), or 10 minutes if thinner. Done when the thickest part reads
125–130°F, or flakes easily with a fork. Rest 2 minutes, then open carefully — peel the foil
back away from your face, hot steam rushes out. Sprinkle with green onions and drizzle
1 Tbsp ponzu over each at the table. Refrigerate leftovers within 2 hours.
⚠ SURVIVAL NOTE: This is about as blood-sugar-friendly as food gets — pure protein and
healthy fat, virtually no carbs. Omega-3s keep your brain sharp for watch duty. Pair with Ration
Rice for a complete meal, or eat it straight from the foil like the field ration it is.
