When the grid goes down, you want food that keeps you full for hours. Two cans of pinto beans, one onion, and 25 minutes gets you 2½ cups of creamy refried beans — 12g protein and 12g fiber per serving. This is the recipe you already cooked once. Last time the oil got too hot while you were still chopping, and the onions burned. Fix: nothing goes on the burner until everything below is chopped, measured, and sitting in little bowls. The whole cook moves fast once the heat is on — there is no "chop during" window in this recipe.

  1. Medium heat — not high. Warm the olive oil in a medium saucepan until shimmering. (Shimmering, not smoking. Smoking = too hot = burned onions, like last time.) Add the onions and salt. Cook, stirring occasionally, until softened and turning translucent, about 5 to 8 minutes.
  2. Add the garlic, chili powder, and cumin. Cook, stirring constantly, until fragrant — about 30 seconds. Spices burn fast; don't walk away. Pour in the drained beans and the water. Stir, cover, and cook 5 minutes. Don't skip the lid this time — the covered steam is what softens the beans so they mash easily.
  3. Reduce heat to low and remove the lid. Mash at least half of the beans with a potato masher — or the back of a fork, which works fine if you don't have a masher yet. Stop at half-mashed for chunky, or keep going for creamy. (Don't use a blender — they're too thick.) Continue cooking uncovered, stirring often, 3 more minutes.
  4. Remove from the heat. Stir in the cilantro and lime juice. Taste — add more salt and lime if it needs it. If the beans seem dry, add a very small splash of water and stir. Cover until you're ready to serve.

♻️ Reheating Rations

Cilantro does not survive reheating. It goes dull and swampy. It's also optional in the original recipe — so the rule is simple: only stir cilantro into the portion you're eating right now, or leave it out completely. Storing a batch? Keep it plain and add fresh cilantro (or a swap like sliced green onions) plus a fresh squeeze of lime after reheating. Same rule as the first serving — both go in off the heat.
